Take Back the Kitchen: Edamame Dip

Who likes dip? Answer: Everyone. Even many of our kids. Sometimes I serve just dips to my kids for a meal using pita chips or carrots sticks as vehicles to get the healthy dips into their little mouths. The following is one of my favorite dips made out of edamame or soybeans which are filled with protein. Kids love the funky almost fluorescent green color and it looks beautiful when it is paired up with a lovely carrot and/or beet dip (stay tuned for those recipes).

1 lb bag of frozen, shelled edamame beans (sold in most supermarkets but definitely in Whole Foods and Trader Joe’s-try to only use organic)
1/2 cup extra virgin olive oil
1/4 cup rice vinegar (can get in most supermarkets)
1 TBS sugar (if rice vinegar is seasoned-which means it has sugar in it, you may not need any sugar)
1 tsp salt
Boil water in a medium sized sauce pan. Add beans and when the water starts boiling again, cook for another 5 minutes. Drain beans and let cool until warm.
In a blender or food processor, add beans, rice vinegar, salt, sugar and oil. Blend until pureed to a creamy texture. Enjoy!

    After attending one of Alma’s very helpful Cuisinart workshops, I made this dip and the carrot for my son’s 2 friends who happen to love green and orange! The 5 year olds ate some and the moms ate the rest, so it worked out well! Very easy and fun to make! Thanks Alma.
